Oven Fried Sweet Potato Wedges

Ingredients
(1) small Sweet Potato cut into Wedges (1) Egg White beaten well1/8 cup bread crumbs or pankoSeasoning of choice (chili powder, cinnamon, pepper)Cooking spray
Directions
Cut potato into wedges (keep skin on). coat with egg white. roll in bread crumbs mixed with seasoning of choice (I had some left over. A little goes a long way).
Place skin side down on baking sheet sprayed with cooking spray. Spray tops with cooking spray to help crisp. Cook in a 400 degree oven till crispy and golden. Mine took about 35 minutes.

Serving Size: 1 serving . I get 6-8 wedges from a potato
