Toaster Oven Corn Bread

Ingredients
1 cup Yellow Cornmeal1 1/2 cup Old Fashioned Quaker Oatmeal1/4 tsp Salt1/4 cup Granulated Sugar 2 tsp Baking Powder1 cup soy milk1 large egg1/2 cup Applesauce, unsweetened1/4 tsp chili powder (optional)
Directions
Put the Oatmeal into a blender or food processor and process until it forms a powder. Add to a bowl with the cornmeal, salt, sugar, and baking powder and stir to blend. Add the soy milk, egg, and applesauce and stir until blended. Add it chili powder if desired.

Pour batter into a 6 x 8 that fits into your toaster oven. Set to bake at 400ºF for 20 minutes.

    I forgot the sugar, because my gramma never made it with sugar, but I will add a tbsp, next time. Also, it needs some fat, so I'll add 2 tbsp of promise when I make it again. This is good for breakfast. - 8/2/13
