2 large eggs2 large egg whites2 ounces feta cheese1 jarred roasted red pepper, diced small1 tsp. butter1/2 cup frozen greens (collards, spinach, whatever) or use 1.5 cups freshdash of pepper (white pepper is good in this)
Beat the eggs and egg whites with a fork, then stir in cheese and pepper. In a small ovenproof frying pan on medium heat, cook the greens in butter until they're completely heated through and wilted. Pour the egg mixture over the greens and cook undisturbed for 5-10 minutes, until the edges are set. Place the pan under the broiler until the top is puffy and browned, then remove from oven, let stand a few minutes to firm up, cut, and serve.
