2.5 links Jennie-o Sweet Italian sausage1/4 tsp crushed red pepper flakes (or to taste)1T EVOO1 large diced white onion2 - 3 large garlic cloves, chopped2 cans chicken stock2 - 3 chicken stock cans water1 cup fat free half and half2 lb sliced Russet potatoes, or about 3 large potatoes2 small bunches of kale ( about 8 oz)
Sauté Italian sausage and crushed red pepper in a large pot. Refrigerate while you prepare other ingredients. In the same pan, saute onions and garlic in EVOO over low-medium heat for approximately 5 mins. or until the onions are soft. Add chicken stock and water to the pot and heat until it starts to boil. Add the sliced potatoes and cook until soft, about half an hour. Stir in the sausage and the kale,cook for about 5 minutes.
Add the half and half and just cook until thoroughly heated.
