Kopper's Citris Salad

Ingredients
Salad1/4 C chopped pecans2 t sugar1/8 t ground red pepper10 C salad greens2 oranges, peeled and sectioned1/4 C craisinsVinaigrette1/2 C fresh orange juice (1-2 oranges)1/3 C fresh grapefruit juice (1 grapefruit)2 T fresh lemon juice (1 lemon)1 T extra-virgin olive oil1 T honey1 T Dijon mustard1 T soy sauce2 t minced ginger
Directions
Makes 6 servings

1. Toast pecans for 6 minutes over med-low heat. Sprinkle with sugar and red pepper. Cook another minute and cool on wax paper.

2. Vinaigrette -- mix ingredients in bullet.

3. Layer -- greens, oranges, and vinaigrette.

4. Mix craisins and nuts and sprinkle over salad.
