Ginger Cardamon Apple Squash Soup

Ingredients
Olive Oil, 1 tbsp Ginger Root, 3 tspGarlic, 3 cloves, tsp cardamonpinch cumina few threads of saffronOnions, raw, 3 medium (2-1/2" dia)Carrots, raw, 1 mediumCelery, raw, 3 stalk, medium (7-1/2" - 8" long) Potato cubed, peeled, raw, 1 medium (2-1/4" to 3-1/4" Apples, fresh, 1 large (3-1/4" dia) (approx 2 per lb Butternut Squash, 2 cup, cubes (remove)Better than Boullion Chicken Base, 2 tsp (remove)waterpepper
Directions
Saute ginger, garlic, onions in olive oil. Add spices, saute briefly then add remaining ingredients and cover with water. Cook until vegetables are evenly tender, about 20 minutes. Puree and season with pepper.
