Ingredients
1/2 cup zucchiniolive oil1 clove minced garlic1/8 cup onionssaltpepper
Directions
Shred zucchini, using cheese grater, lay on paper towels to dry out before sauteing in olive oil. Add minced garlic and onions, and saute shredded zucchini. Add salt and pepper to taste.

    This recipe was very good. I added extra (spicy) seasoning, 2% shredded cheese, a few slivers of chopped bell pepper & a couple of chopped asparagus tips. I also added a couple of eggs on top. This was a great breakfast! - 8/6/16
