Stir fried bean curd with fresh mushrooms in oyster sauce

Ingredients
6 oz mushrooms2 TBS soy sauce1 tsp sugar2 Tbs oyster sauce1 tsp cornstarch dissolved in 1 TBS water2 Tbs canola oil2 garlic cloves crushed 2 slices unpeeled ginger1 block firm tofu drained and cut in 1/2 inch cubes2 scallions thinly sliced2 tsp sesame oil
Directions
Slice mushrooms. Mix together the soy, sherry, sugar, oyster sauce, and 1 TBS water.
Heat a wok with the canola oil over high heat. Add garlic and ginger and stir until the oil is hot and garlic and ginger sizzle. Add mushrooms and cook until they turn dark about 2 minutes. Add the bean curd and soy mixture and cook stirring gently for about 3 minutes. Stir in the scallions and cook for 30 seconds. and the corn starch mixture and stir until thickened. Drizzle with sesame and mix well. Discard the garlic and ginger. Serve immediately.
