Mushroom Grilled Cheese

1/2 cup white mushrooms 1/8 medium yellow onion1 scallion, greens only1/2 cup reduced-fat cheddar, shredded2 slices Atkins Bakery Sliced Rye Bread1 1/4 tbsp butter1 tsp garlic paste
Heat pan to medium.
Melt 1 tsp butter.
Add mushrooms, cook for 1 minute.
Add onion and garlic, cook another minute.
Add scallions, remove pan from heat after 1 minute.
Stir in cheddar.
Spread remaining butter on one side of each slice of bread.
Spread mixture on the non-buttered side of one slice.
Cover with other slice, such that buttered side faces out.
Wipe down pan and use it to grill the sandwiches, two minutes a side. Alternatively, you can use a panini press for a more grilled result.
Serve with a green salad or non-creamy soup for a filling, healthy meal!
