Rustic Kale, Bean and Smoked Turkey Soup

Kale Soup1 smoked turkey leg1 1/3 cups navy beans1 celery stalk, small diced1 med. yellow onion, small dice1 carrot, small dice1 bunch kale, torn into bite-sized pieces1 bay leaf1 tsp garam-masala1/2 tsp cardamom1/2 - 1 tsp cayenne, depending on how spicy you like it7 sprigs of thyme, whole1 tsp chicken base (or one chicken bouillion)2 tbsp oil, (olive, canola, peanut... doesn't really matter)6 - 8 cups water (plus more if necessary)salt and pepper
