Stir Fried Shrimp & Pea Pods

Ingredients
1 lb. uncooked medium shrimp1 lb. fresh Chinese pea pods1 tsp. corn starch1/4 tsp. ground ginger2 TB. soy sauce2 TB. dry sherry1/2 C. chicken broth3 TB. peanut oil1 clove garlic, minced1 can (8oz) water chestnuts, drained and sliced
Directions
Remove shells from shrimp; devein. Set aside. Trim pea pods and set aside.
Mix cornstarch, ginger, soy sauce, sherry and chicken broth. Set aside.
Heat oil in wok or wide skillet. Add shrimp and garlic. Stir-fry over high heat for 1 minute. Add peas and continue to cook for 2 minutes, stirring. Add water chestnuts.
Stir in cornstarch mixture. Heath until it boils and thickens. Toss to coat all ingredients well, serve immediately over brown rice if desired.
