Ginger Tea

Ingredients
Fresh Ginger Root, Big chunkHoney 1 1/2 CFresh Sqeezed Lime Juice 1 CEarl Grey Tea LeavesEchinacea Extract 1tPropolis Extract 1TAlmost 2 Qt.'s Water
Directions
Cut unpeeled ginger into 4-5 pieces, toss in blender until coarsely chopped (add water if necessary, DO NOT PUREE. Dump into 2 Qt saucepan. Rinse blender with water, dumping into saucepan, several times until clean USE LESS THAN 2QT.'S TO DO THIS. Heat to a low boil and simmer until fragrant (5-8 minutes). While ginger is cooking, put on some weater to boil, squeeze limes into blender and add honey to blender. When ginger is fragrant turn off heat, add earl grey tea leaves (enough to make a 2Qt pot of tea) and cover. Let steep 7 minutes. Strain into blender. Rinse leaves and ginger with enough water to bring total volume of tea to 64 oz. and pour through strainer into blender. Blend at lowest setting until whirlpool forms, add extracts, continue blending until mixed (30 sec). Refridgerate what you don't drink immediately, It lasts at least a week (I've never kept it longer, but I am sure it is good for a long time), microwave to reheat. Good for colds.

    I made a summer version with green tea, 1/2 c fresh lime juice topped off with the juice of 2 oranges, and only 3/4 c honey (I don't like things too sweet). Perfect! I'm sipping on a hot cup now and look forward to the chilled tea later! - 7/24/08
