Eggplant and black bean chili

1 lb eggplant, peeled and cubed2 red onions, finely chopped4 garlic cloves, minced3 Tbsp chili powder4 cups diced tomatoes1 15 oz can black beans, drained and rinsed2 Tbsp grated quality dark chocolate1 tsp corianderpinch cuminpinch cinnamonbay leafsalt and pepper, to tastecanola or veg oil for frying

1. Heat oil in pan and fry the eggplant for 4-5 minutes. 2. Fry onions and garlic in same pan for about 5 minutes. 3. Add tomatoes, coriander, cumin, cinnamon, chili powder and bay leaf and simmer for 5 minutes. 4. Add beans and grated chocolate, then cook for an additional 15 minutes. Serves 8.
