Quick and Hearty Vegetable-Bean Quinoa

Ingredients
I cup (170g) Quinoa2 cups low sodium vegetable broth1 can (425 g) black beans, drained and rinsed1 jar (15 ounces or 425 g) salsa1/4 cup chopped chives1 cup chopped bell peppers
Directions
In a medium saucepan, toast the quinoa for 2 minutes over medium heat. Add the broth and bring to a quick boil. Reduce the heat, cover and simmer for about 12 minutes or until the quinoa is tender and the tails have popped. When the quinoa is done, add the beans, salsa, chives and peppers and cook for 1 minutes or until it reaches desired temperature.
