EL Italian Sausage

Ingredients
3 lbs Ground Pork (ground Pork Butt - well marbled)2 T Garlic (minced)4 1/2 t Paprika2 t Fennel (toasted & ground)1 T Salt (anything non-iodized)1 T Pepper (better if fresh)3 T Red Wine (dry preferred)
Directions
Mix spices first.
Pour over the ground pork & add wine.
Mix together thoroughly - don't squeeze the meat.
Use within 1 week or freeze for up to 3 months.
