Southwest Polenta

For polenta:1 cup cornmeal1 1/2 cup prepared fake-chicken (chik'n) broth1 1/2 cup watersalt + garlic to tasteTopping:1 15-oz can black beans (or 1 1/2 cups)1/3 cup chunky salsa of your choice
To make polenta:
Broil broth and water and add the cornmeal. Stir and immediately reduce heat to medium low. Stir constantly, adding salt and garlic to taste. Polenta is done when it pulls away from bottom of pan and is very thick (15-30 minutes, depending).
Pour polenta into a cake/pie pan and smooth, and then refrigerate for at least 15 minutes (but overnight is best).
When polenta is cooled, in a separate bowl, mix together DRAINED black beans and salsa (you can add more salsa if you want). This is used as a topping for the polenta. Cut into 6 pieces. Dig in!
