1 Green Bell Pepper1 Red Bell Pepper1 CucumberSprouts (about 2 cups)Spinach (about 2 cups)Red Leaf Lettuce (about 2 leaves per sandwich)1 Cup plain Greek yogurt4 pita breads, cut in half
The night before, set the cup of Greek yogurt into a strainer lined with cheese cloth. Place the strainer over a bowl to catch the liquid, and set in the fridge over night. In the morning, the access moisture should have drained off the yogurt, creating a soft cheese.
Slice up the peppers and cucumber, gather the rest of the ingredients, divide into four portions, then further divide each portion into half and stuff into the pita bread halves.
