Oatmeal Pancakes

Ingredients
2 eggs2 T vegetable oil1 cup all-purpose flour1 cup rolled oats1.5 t baking powder0.75 cup orange juice
Directions
1. Mix eggs with oil. Separately combine the flour, oats, baking powder in medium bowl.
2. Stir egg mixture into the dry ingredients, then stir in the juice.
3. Cook mini pancakes (about 2 inches across) in heated frying pan.

Serving Size: makes about 50 mini pancakes
