Banana Bread - Gluten Free

Ingredients
4 tablespoons butter, melted1/2 cup sugar or honey2 eggs, beaten1 cup banana, mashed1-3/4 cups Pamela's Baking & Pancake Mix1/4 teaspoon salt1/2 teaspoon vanilla1/2 cup nuts (optional)

Directions
Beat together butter, sugar or honey, eggs and banana. Add remaining ingredients and mix together. Pour into a large greased loaf pan (grease only bottom). Best to use a dark pan (not glass).

Bake in a preheated 350° oven for 1 hour, or until an inserted toothpick comes out clean.
