Skinny Stuffed Cabbage Soup

Ingredients
1/2 head of cabbage - shredded2 - large cans fat free chicken broth1 - 32 oz can diced tomatoes1 - 15 oz can crushed tomatoes1 onion - diced2 stalks of celery - diced2 large carrots - chopped2 c farro (or brown rice)1 lb. extra lean ground beefsalt & pepper to taste
Directions
1. Saute the ground beef with salt & pepper or any other desired seasonings in a stock pot
2. Saute the chopped onion, celery, and carrots
3. Add beef back to the stock pot
4. Add 1 can of broth, crushed tomatoes, diced tomatoes and shredded cabbage and bring to a simmer
5. Cook farro / rice in the second can of broth until done (about 40 mins)
6. Once farro is done, add back to the pot - turn off the heat and enjoy
