Spinach & Chicken Quesadilla

Ingredients
1 T. Olive Oil1/2 large Onion diced1 T. MInced Garlic5 medium Mushrooms chopped1 tsp. Cumin ground1 tsp. Chili Powder1 tsp. Oregano10--8" Flour Tortillas 3 c. shredded cheddar cheeseSour CreamSalsa
Directions
Cook chicken and season with salt & pepper
Chop chicken into bite size pieces

Sautee onion, garlic, and mushrooms in olive oil
Add cumin, chili powder, and oregano to sauteed veggies
Chop spinach and add to sauteed veggies
Add chicken to veggies

Heat pan over medium heat and spray cooking pan with non-stick spray
Lay one flour tortilla in pan
Sprinkle cheddar cheese over tortilla
Add chicken veggie mix over cheese
Sprinkle cheddar cheese over chicken veggie mix
Cover chicken veggie mix and cheese with another flour tortilla
Grill tortilla until browned and then flip over to brown other side

Cut into quarters and serve with sour cream, guacomole, and salsa

Makes 10 servings; each serving is 2-1/4 pieces of the quesadilla
