Low Carb French Onion Soup

Ingredients
3 medium onions, peeled, halved then sliced in transparent pieces4 cups beef stock (left overs from pressure cooker chuck roast)4 cups water1/2 stick unsalted butter2 tsp. minced garlicgenerous pinch herbs d' Provence1/2 tsp. sea salt2 tsp. fresh ground black peppercorn4 Tbsp. grated Parmesan Cheese
Directions
Caramelize onions: Use cast iron or heavy stainless steel skillet , add butter, garlic and onions. Cook over medium heat for 45 mins. Stirring frequently until onions are browned well. While onions cook, add into beef broth, water, French herbs, salt and pepper. When onions are done, transfer to soup pot with spiced beef broth. Add hot water to hot skillet first then add into soup pot. Simmer for 1 hour. Garnish with 1/2 Tbsp. of the Parmesan for each serving.
