Fajita-Style Tofu

Ingredients
1 pound/block FROZEN tofu, thawed and squeezed dry1 tbsp olive oil2 tbsp lite soy sauce2 tbsp balsamic vinegar2 cloves garlic, pressed2 tbsp water
Directions
**MAKE SURE TO USE FROZEN TOFU!! At least 24 hours in advance.**
Once tofu is thawed and dry, slice into thin strips.

In a small bowl mix together soy sauce, balsamic vinegar, garlic and water, and pour over the sliced tofu. Press the slices so that the liquid is absorbed evenly into the tofu.

Bring a nonstick pant to heat, add the tbsp of olive oil, the tofu strips, and saute until browned.

Serving Size: makes enough for 4 fajitas
