Easy Italian Chicken and Potatoes

Ingredients
3 boneless, skinless chicken breasts5 small to medium potatoes1 c. Fat Free Italian Salad Dressing1/8 c. grated parmesan cheeseItalian seasoning
Directions
Preheat oven to 375 degrees. Peel potatoes and cut into chunks. Pour about 1/2 of the Italian dressing over potatoes and stir. Put potatoes in a 9 X 13 baking dish. Place chicken breasts on potatoes and pour the rest of the dressing over entire dish. Sprinkle cheese over the top. Sprinkle Italian seasoning to taste. Bake for about 30 minutes or until potatoes are soft.

    I enjoy this, it's easy and tasty. However, I make this same amount to feed 4 servings instead of 3 and add in one extra chicken breast. You can also adjust calories since most of the salad dressing stays on the bottom of the pan. - 8/24/10
