split peas, smoked ham hock, sage, kosher salt, carrots, onions, celery, pepper, garlic
In a large pot rinse the dried split peas. Cover with water and bring to boil. Skim foam off the top. Add ham hocks and water enough to cover. Simmer 1 hour. Add everything else and cook 2 hours longer. Add more water as necessary. The soup is finished when the peas no longer have shape.
Remove the ham hocks, cool, pick and chop the meat off the bone. Add back to pot if desired.
Serving Size: 6-2 cup portions.
