Ingredients
1 15 oz can each: Light Red Kidney Beans Dark Red Kidney Beans Pinto Beans Black Beans Red Beans1 24 oz can Crushed Tomatoes1 6 oz can Tomato Paste1 large Green Bell Pepper1 large White Onion3 Jalapeno Peppers3 cloves Garlic, crushed and minced1 tablespoon Cumin3-4 tablespoons Chili Powder2 tablespoons olive oil(optional) 1/2 lb frozen sweet corn
Directions
Dice peppers and onions; heat olive oil on medium-high in a large stockpot or Dutch oven, add garlic, peppers, and onions, saute for 5 minutes, or until onions are nearly transparent. Add beans, tomatoes, tomato paste, and spices, bring to a boil. Once boiling, reduce heat to low and simmer for 30 min. to an hour. Remove from heat when desired thickness is reached, stir in corn until heated through. Serve with tortilla chips or corn bread.
