beetroot and cumin soup

Ingredients
1 tbsp olive oil1 onion 1 heaped tsp group cumin1 litre vegetable stock/chicken stock8 small cooked and peeled beetrootssalt and pepper to tastefromage frais and coriander to garnish is optional.
Directions
heat the oil and add the onions and ground cumin. Cook over moderate heat until nearly soft but dont brown. Add stock and beets season and cook for 25 mins.

let the soup cool slightly and the puree until smooth.

Reheat and season as desired.
