Curried Shrimp w/ Orange Peanut Sauce

1 Tbsp Olive Oil1/2 Cup Orange Marmalade1/2 Cup Orange Juice1/4 Cup Peanut Butter1 Tsp Curry Paste (or to taste)1 Tbsp Minced Garlic1/2 Tsp Chili Sauce (or Sambai Oelek)1/4 Tsp Salt1 lb Chicken (or raw de-veined Tiger Shrimp or 1/2 & and 1/2)1-2 Cups Spinach (optional)
Combine all ingredient but shrimp and spinach in large bowl and whisk until smooth.
Add Shrimp and marinate in fridge for and hour (the longer the better).
When ready to cook, add olive oil to large skillet pan over medium-heat.
Remove shrimp from marinade and cook in skillet until they turn pink. Once cooked transfer to a bowl and cover.
Add marinade to skillet pan and heat until well through. If you like, add the spinach and cook until spinach wilts.
Return shrimp to skillet pan, stir in.
Remove from heat and serve
