Tomato Soup, homemade

Ingredients
1 1/2 cans (28 oz) crushed tomatoes1/2 cup carrots, diced1 medium onion, diced2 stalks celery, diced1 tbsp olive oil4 cups vegetable brothsalt & pepper to taste
Directions
Heat olive oil in a large soup pan. Add onions, carrots and celery. Saute over medium high heat until the onions are transluscent and the carrots are softened. Add tomatoes and broth. Stir. Bring to boil and simmer for 45 minutes. Add salt and pepper to taste. Puree with an immersion blender. Enjoy!
