2 cans garbanzo beans, rinsed and drained2 c. plain bread crumbs4 egg whites2 T. chopped fresh parsley4 t. lemon juice2 t. garlic powder1 t. ground cumin1 t. salt1 t. black peppercooking spray
Preheat oven to 400 degrees F. Coat 2 cookie sheets with cooking spray. Mash all ingredients thoroughly (you can use a food processor, but I prefer the texture when I do it by hand). Form into 1 1/2 inch balls, place on cookie sheets, and flatten to about 1/2 inch. Spray tops with cooking spray. Bake 20 minutes, turning halfway through cooking.
