Egg Muffins

Ingredients
1 cup chopped green pepper.25 cup chopped green pepper6 eggs1/4 cup part skim mozzarella cheese1 chicken sausage link, diced
Directions
Prepare all vegetables.
Line a muffin-tin with reynold's muffin cups, or arrange 12 muffin cups onto a cookie sheet. Spray each cup's bottom and sides with cooking spray.
Evenly distribute green pepper, green onion, and chicken sausage into the 12 cups.
Beat the eggs and pour evenly into each cup. Pour a little, let it settle, then pour a little more until each cup is above 1/2 way to 3/4 way filled.
Using a fork, mix each cup around to evenly distribute. Sprinkle mozzarella cheese on top of each cup.
Bake @ 375F for appx 25-30 min
