1/2 cup canola oil3 cups chopped onions1 cup chopped bell peppers3 teaspoons salt1 1/4 teaspoons cayenne1 pound andouille, chorizo, or other smoked sausage cut crosswise into 1/4 inch slices1 1/2 pounds boneless skinless chicken breast meat, cut into 1 inch cubes3 bay leaves3 cups long grain wild rice6 cups water1 cup chopped green onions
