Egg "Muffins"

Ingredients
1 bell pepper - chopped1/2 onion - chopped1 can black beans - drained and rinsed1/2 c. salsa3 whole eggs1 c. liquid egg substitute2 oz. shredded cheddar cheese
Directions
Cook onion and bell pepper in cooking spray until soft. Beat eggs together in separate bowl. Combine onion, peppers, salsa, black beans. Spoon mixture evenly into 12 cupcake tins. Pour egg mixture over evenly. Evenly divide the cheese between the 12 cups. Bake @ 350 for 25 minutes.
