Baby Food Pancakes

Ingredients
2 eggs1 1/4 c flour (1/2 all-purpose, 3/4 whole wheat)1 c infant cereal any flavor3 jars baby food (or 10-12 oz pureed fruit like applesauce)1 tsp baking soda1/2 tsp salt1 Tbsp baking powder1 1/2 c fluid (I use 1 c skim milk and 1/2 cup juice)2 T Canola or other vegetable oil
Directions
Beat eggs in a mixing bowl.
Add remaining ingredients and mix until smooth.
Cook in a non-stick pan on med-low heat (about a 4) until bubbles form on top and pop, then flip and brown the other side.
Enjoy with your favorite topping.
