High protein Nutty Granola

Ingredients
4 cups steel cut oats1/2 cup shredded coconut1/2 cup chopped almonds3/4 cup chopped walnuts1 cup dried cranberries1/2 cup pumpkin or sunflower seeds1/2 cup pineapple juice1/2 cup apple juice1/4 cup honey
Directions
In a large bowl, mix first six ingredients.

In a small pot, bring the fruit juices and honey to a boil. Simmer until reduced to 2/3 cup. Pour over dry ingredients and stir until thoroughly mixed.

Spread mixture on baking sheet and bake at 325 for 40 minutes. Stir once halfway through cooking time.
