1/8th C. ground flax seed- (hodgson's mill) 1/8thth C. almond meal (red mill) 1tsp. baking powder (great value) 1tsp. cinnamon (5th season) 1tsp. all spice ( mccormick) 2 packets sugar substitute sweetener (i prefer truvia/stevia) 1tbsp. butter-melted 2 tsp. soy milk ( great value brand) 2tsp. heavy cream (great value brand)1 egg1tsp pure vanilla extract ( great value brand) 1/8th tsp orange extract ( watkins) 2 tsp. pecans ( fisher naturals ) 2 tsps sugar free chocolate chips- about 20 chocolate chips ( hershey's)
Directions:
mix all ingredients a coffee cup. cook in mocrowave for about 1 min. and 20 seconds. (time may vary, add or subtract about 5 seconds until you find what cook time works best).
Remove from microwave, then take a butter knife and go around the edges of the muffin to release it from the cup, invert onto a plate and enjoy!
