Black Bean Hummus

Ingredients
2 15 oz cans black beans (drained and rinsed)1/2 cup onion3 garlic cloves peeled 2 tsp lemon juice2 tsp olive oil (extra virgin)1 tsp cumin, ground1/4 tsp cayenne (more or less depending on how hot you like it.1/2 tsp ground black pepper1/4 tsp saltabout 3 tbsp cilantro or more if you like it
Directions
open beans and rinse in colander toss in the food processor with all the other ingredients except for the cilantro. Puree until smooth (about 2 minutes)
add the cilantro and process for about 15 seconds.

makes 6 1/2 cup servings

    Made it without the salt or cilantro. I like the sharpness the raw onion and garlic add. Decided to toss in some tahini to see if it would add a little more depth. It is very good with or without the tahini although I preferred it with. Definitely will make again. - 10/8/11
