Vegetarian Bean and Sweet Potato Chili for Slow Cooker

Ingredients
1 tbsp olive oil1 medium onion, diced1 red bell pepper, diced3 cloves garlic2 tbsp chili powder1 tsp cumin1 tsp coriander1 tsp saltCayenne pepper to taste (1/4 tsp for fairly mild chili)4 cups diced sweet potato1 14 oz can crushed tomatoes1 can kidney beans, drained and rinsed1 can black beans, drained and rinsed1.5 cups water
Directions
Saute onion, pepper and garlic in a frying pan on medium heat until soft. Add spices and cook for an additional 30 seconds or so.

Add the sauteed veggies and all other ingredients to the slow cooker. Cook on low for 6-8 hours.
