2 medium sweet potatoes1 shallot, minced2 tbl margarine1 bag fresh baby spinach1 cup chickpeas
Bake the sweet potatoes in a 350 oven until soft, 45 -60 minutes.
While potatoes are cooling, saute shallots until translucent.
Add spinach and saute until wilted.
Scoop cooked sweet potatoes into a bowl.
Mix in the spinach and shallot.
Stir in the chickpeas.
Bake in 350 oven until heated through, 30 - 40 minutes.
