Ginger Papaya Vinaigrette Dressing

Ingredients
1 cup cubed papaya2" section frozen ginger root, grated = 1/4 cup loosely packed1/2 cup freshly squeezed lime juice (about 5 limes)1/4 cup apple cider vinegar1/2 cup + 2 Tbsp honey (or agave nectar)1 tsp salt3/4 cup vegetable oil
Directions
In high powered blender, add papaya, ginger root, lime juice, vinegar, honey and salt. Blend until completely smooth. While the blender is running, slowly stream in the oil. It will be emulsified and lovely. Enjoy!
