Egg & "sausage" casserole

Ingredients
3 large eggs1.5 T olive oil1 cup mushroom slices.5 zucchini, sliced.5 squash, sliced2 morning star veggie sausage patties.5 cup shredded cheddarsalt and pepper to taste (garlic salt)roasted red pepper flakes, optional.
Directions
Heat oil in skillet, add mushrooms, squash, and zucchini. Heat sausage as directed on package and place in the bottom of a loaf pan. Whisk eggs. When veggies are cooked to desired doneness, mix with eggs, and add seasonings. Mix in cheddar, and pour over sausage patties. Bake at 350 for 15 minutes.
