Grilled Asparagus

Ingredients
1 lb. asparagus (about 16 spears)3 T. red wine vinegar1.5 t. splenda2 T. lemon juice1/2 T. extra virgin olive oil1 T. soy sauce 1 garlic clove, minced (or garlic to taste)1/2 t. sea salt1/2 t. black pepper (or to taste).
Directions

1. Wash and snap off tough ends of asparagus.
2. Combine all ingredients in a resealable large platic bag. Let marinate for 1-1.5 hours, turning frequently.
3. Remove asparagus from bag and grill on a preheated grill over medium heat. Grill 5 minutes per side or until desired doneness. I use a vegetable grill plate so I don't loose any of the asparagus spears into the coals.

Makes 4 servings/ 4 spears per serving

    I didn't marinate this as long as I was supposed to but it was still very good. Next time, I'll plan ahead so I have enough time to marinate an hour. - 4/24/09
