Lazy Weekend Lasagna

Ingredients

1 lbs. carton of small curd cottage cheese (*16)½ cup Parmesan cheese (*4)32 oz. jar of spaghetti sauce [I prefer Prego Meat- flavored.] (*32)1 ½ - 2 lbs. uncooked ground beef (*32)1 envelope dry spaghetti sauce mix (*1)6 oz. can tomato paste (*6)1 cup water (*8)1 lbs. box of uncooked lasagna noodles (*16)1 lbs. grated mozzarella cheese (*16)
Friday
1. Mix cottage cheese with Parmesan cheese and return to refrigerator overnight.
Saturday
1. Brown ground beef and drain.
2. In same skillet, add tomato paste, dry spaghetti mix, and 1 cup water to ground beef.
3. Warm meat mixture on low heat to blend flavors and absorb mix. [This should be a
thick meat mixture with sauce enough to hold it together. Do NOT follow directions on
dry mix package as you do not want the more liquid consistency of true spaghetti sauce.]
4. Grease lasagna pan [9x13 cake pan or larger].
5. Pour half of spaghetti sauce from jar into bottom of pan.
6. Cover bottom of pan with one layer of dry lasagna noodles, trimming as needed to fit
pan.
7. Spread half of cottage cheese mixture on dry noodles in pan.
8. Spread half of meat mixture over cottage cheese mixture.
9. Sprinkle one-fourth (4 oz.) of mozzarella cheese over meat mixture.
10. Add second layer of noodles, cottage cheese, meat, and 4 oz. mozzarella cheese.
11. Add final layer of noodles, covering previous layers as completely as possible.
12. Pour remaining half of spaghetti sauce from jar over top layer of noodles.
13. Sprinkle remaining half (8 oz.) of mozzarella cheese over sauce.
14. Cover with plastic wrap and place in refrigerator overnight.
Sunday
1. Preheat oven to 350 degrees.
2. Remove plastic wrap and bake lasagna 45 - 60 minutes.
3. Remove from oven and let sit at 10-15 minutes before trying to cut.
4. Cut into 12 servings, and carefully remove from pan to preserve layers.
