Ingredients
360g of boneless, skinless chicken thigh1 cup sliced mushrooms2 cups canned tomatoes, diced2 cups canned pasta sauce1 whole onion, sliced1 large bell pepper sliced2 cloves garlic, minced1 tsp italian seasoningsalt/pepper to taste
Directions
spray non stick pan with pam. cook chicken over med-high heat, turning frequently, about 8 minutes until golden brown. Meanwhile...spray non stick pam to another pan...saute garlic and onion for 2 mins., add remaining ingredients, bring to a slow boil. Add chicken, lower heat, cover and simmer for another 1/2 hour to finish chicken and soften veggies.
