1 1/4 cup all purpose flour1 cup quick oats2 teaspoons baking powder3 teaspoons Ener G Egg replacer and 4 Tablespoons water (or 2 eggs)1/2 cup soymilk, vanilla soymik, or other milk1/4 cup oil1/3 cup honey12 slices of bacon cooked, drained and crumbled
Preheat oven to 400 degrees. In a large bowl, mix flour, oats and baking powder. In a medium bowl, mix egg replacer and water. Add soymilk, oil and honey to egg replacer and blend well. Mix medium bowl ingredients with flour mixture until thoroughly moistened. Add bacon and blend. Spoon into muffin cups until cups are 3/4 full. Bake for 15-20 minutes.
