Slow Cooker Buffalo Chicken Chili

1 1/2 lbs Skinless Chicken Breast cut in 1 inch pieces, all visible fat removed1 cup chopped Onion1 cup chopped Celery1 cup chopped Carrots1 cup chopped Sweet Red Bell Pepper2 cans Reduced Sodium Black Bean, drained and rinsed2 cans No added salt diced Tomatoes2 cups Kitchen Basics Chicken Stock )Lower in sodium than even the 33% less sodium varieties)1 Tbl Chili powder2 tbl Frank's red hot pepper sauceCheyenne Pepper to tasteBlack Pepper to taste
Spray crock pot with cooking spray.
Add all ingredients except hot pepper sauce, cheyenne and black pepper.
Cook on high in crock pot about 9 hours, until chicken thoroughly cooked and veggies soft.
Add last 3 ingredients, stir throughly.
Serve with crumbled blue cheese if desired (not included in calorie count)
