Citrus Marinated Tri Tip

Rub:Paprika, 1 tbspChili Powder 1 tbspGround Black Pepper 1 tbspSalt 1 tsp*Cumin Powder 1 tbsp (Cumin Seed used for nutritional info, ground cumin used for rub)Marinade:Tangerine Juice, .5 cup (If you cannot find Tangerines you can substitute Limes or Grapefruits)Olive Oil, 3 tbspBeef, tip round, 8 oz
1. Combine all rub ingredients in a small bowl. Set aside.
2. Poke some small holes with a fork in the Tri tip to allow the meat to absorb more of the marinade.
3. Rub the meat with the spice mixture, coating evenly.
4. Combine Tangerine Juice and 2 tablespoons of Olive Oil in a ziploc bag. Seal bag well and shake to combine.
5. Allow meat to marinate for a minimum of 2 and up to 24 hours. The longer it marinates, the more tender it will become.
6. Heat 1 tablespoon of Olive Oil in a heavy bottom skillet or cast iron pan on a medium-high stove.
7. Sear meat for 3-4 minutes on both sides until it is crisp and browned.
8. Cook meat an additional 2-4 minutes on each side. (Internal temperature 145 degrees F for medium-rare)
9. Let meat rest for at least 5 minutes before slicing. Slice against the grain.
