1 head of cauliflower1 yellow onion sliced or diced2 cups (1 can) chicken brothscant 2cups almond milk or skim milk3 tbsp walnuts or almondssalt and pepper to taste
Cut cauliflower into florettes. Put florettes in soup pot with chicken stock and chopped onions. Bring to boil, then simmer for 15 minutes until soft. Add milk and nuts. Immersion blend til smooth. Season with salt and pepper. A dash of paprika or parsley or .... ? .... for presentation.
