amanda's chicken & veggie curry

Ingredients
3 tbs red curry paste1/2 cup chicken broth6 oz coconut milk8 oz bone/skinless chicken2 cups large dice zucchini1 large and 1 small can mushrooms1 cup fresh spinachoptionaladditional red curry dry spicechopped cilantro
Directions
in large saute pan add:

chicken
curry paste
coconut milk
chicken broth

bring to simmer and cook 5 min. (lid on)
add zucchini and mushrooms, cilantro and curry powder. allow to cook until zucchini gets soft.

add spinach and cover.
allow spinach to wilt (approx 3min)

add additional cilantro and curry powder to taste, and fish sauce.
