Vegetarian Black Bean Chile

2 T Extra Virgin Olive Oil2 C chopped onions1 2/3 C chopped red bell pepper6 garlic cloves chopped2 T chili powder2 t dried oregano1 1/2 t ground cumin1/2 t cayenne pepper3 (15 oz) cans of black beans (reserve 1/2 C liquid - rinse beans)1 (16 oz) can of diced tomatoes1 (16 oz) can of tomato sauce
Heat oil in large pot. Add onions, peppers and garlic; saute until onions soften about 10 minutes. Mix in chili powder, oregano, cumin and cayenne; stir 2 minutes. Mix in beans, 1/2 c reserved bean liquid, diced tomatoes, and tomato sauce. Bring chili to a boil, stirring occasionally. reduce heat to medium-low and simmer until flavors blend and chili thinckens, stirring occasionally, about 20 to 30 minutes.
